These are soft, chewy cinnamon-sugar cookies, and they’re my favorite thing to bake on a cozy fall night.

Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 3/4 cups flour
- 1 1/2 teaspoons cream of tartar (use 1 teaspoon for less tang)
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
Cinnamon-sugar coating
- 1/4 cup sugar
- 1 1/2 tablespoons cinnamon
Instructions
- Preheat your oven to 350°F.
- In a large bowl, cream the butter and sugar for 4 to 5 minutes, until light and fluffy. Scrape down the sides, then add the eggs and vanilla and mix for another 1 to 2 minutes.
- Stir in the flour, cream of tartar, baking soda, and salt until just combined.
- In a small bowl, mix the sugar and cinnamon for the coating.
- If you have time, wrap the dough and chill it for 20 to 30 minutes. Roll the dough into small, smooth balls and roll each one in the cinnamon sugar. Spoon more over the top so they’re completely covered. For flatter cookies, press down the center of each ball a little before baking so they don’t puff up in the middle.
- Place the dough balls on a parchment-lined baking sheet and bake for 9 to 11 minutes. Let them cool on the baking sheet for a few minutes before moving them.
